Mother-in-Law 3 Ingredient Cheesecake!
I am one of those rare and lucky women in that I have a really lovely mother-in-law and we are extremely fond of each other! I acknowledge this is a priviledge. 🙂
However, we do differ in one big area and that is, she doesn’t love to cook, whereas I quite enjoy it. In spite of that, she always produces tasty meals, and this cheesecake is one she made when we visited her in South Africa recently.
It is so ridiculously easy to make as it only has three ingredients and you even cook it in the microwave! When she first told me how she made it I was incredulous. Even my Portuguese sister-in-law (a fabulous and experienced cook) didn’t believe that cooking yoghurt in the microwave was a thing!
This is an ideal dessert if you need to whip up something at the last minute when you’re having lazy summer barbeques and can’t be bothered to spend ages in the kitchen:

Ingredients:
- 200gm Rich Tea or Marie biscuit crumbs
- 500ml natural yoghurt
- 1 tin condensed milk
Method:
- Lay crumbs in the base of a microwaveable dish. (You could reserve a few crumbs to sprinkle on the top if you want to be very fancy).
- Mix yoghurt and condensed milk together and pour over the crumb base.
- Microwave on high for 3 minutes.
- Allow to cool.
- Eat!
Yes it really is that simple – crazy isn’t it? Yet delicious.

Oh that is so simple! I love simple recipes. I usually use cream cheese in mine, how does it differ in taste with the natural yogurt?
Yes that’s how I would have made it too, I guess this is really similar but slightly less sweet.
What brand of yoghurt (SA) is best to use? Thanks. Will give this a try. 😁
I would recommend a thicker Greek style of yoghurt. Enjoy! 😄👍🇿🇦
