Our favourite winter warmer soup – sweet potato, smoked pancetta and butter bean
A simple and delish dish that my whole family enjoys.
This soup recipe is so tasty and so quick to make, it could be even simpler than I have it if you leave out the sweet potato! It is a rich and filling soup, my family all love it.
Feeds 6-8 people.
- 2 medium onions diced
- 85 gm smoked pancetta (or equivalent weight in bacon rashers)
- 1 large sweet potato, peeled and diced
- 1 400 gm tin of butter beans drained of liquid
- 1 litre of chicken stock
Place diced onions into a large pot with a tiny drop of oil or butter and saute with the diced pancetta or bacon over a gentle heat until the onions are transparent. Add the sweet potato and continue to saute until everything starts to caramelise slightly.
Add the stock and bring to the boil.
Once the sweet potato is soft (about 5 -10 minutes), add the beans and reheat.
Blend to a smooth consistency, season to taste with salt and black pepper. I find it doesn’t need any salt as the smokey pancetta provides enough.
Serve with a fresh crusty loaf and butter.
As I said above this soup is equally delicious if you leave out the sweet potato altogether, reduce the amount of stock and make it with just the onion, butter beans and bacon or pancetta but it would make a smaller amount.
